Looking for backup (sync) software

i have things set imac regularly backs via time machine large drive.

however, want add on limited, secondary backup, critical documents consist of pdfs , text files (financial records, tax returns, etc.).

bought portable drive can keep in fireproof safe; intent plug imac maybe couple of times week in order synchronize important documents. think best way
1) automatically new documents,
2) automatically new versions of modified documents, while keeping easily-identifiable copies of old versions,
3) manually delete documents have been deleted imac (so, of course, don't accidentally delete backup of file that's unintentionally missing imac).

i'm aware of "big" apps renowned making clones or bootable backups (superduper, carbon copy cloner, etc.), since i'm not looking functionality, @ least not chiefly, what's best doing want: identify specific folders on imac's drive , keep them synchronized, above?
