Just unlocked AT&T iPhone 5, but do I have to restore?

i processed unlock code through at&t, , sent me e-mail saying device can unlocked. want me restore device through itunes. problem if this, restore ios 8.1. want stay on ios 6. question have restore, or can pop in t-mobile sim card device now?
 

why don't pop in , see happens?
