Can I safely uninstall an app and retain an old version?

up until recently, i've been using iwork '08. latest version of pages allows export epub format, sounded useful, purchased pages (and while there) numbers, app store.

found new versions won't open of existing files!
in short, spoke apple have agreed refund me cost, they've done, , i'm grateful for.
however, still have new versions of software installed, , feel, matter of principle, should uninstall them.

question : if uninstall latest version of pages & numbers, using appcleaner, only uninstall files relate new versions, leaving old apps intact?
don't want rid of new versions , find cripples iwork '08 versions @ same time because old & new versions share files.
